I love the ethos that the Parigot family maintain during their winemaking. Not only do they consider the present year's harvest they also think forward to the effect it will have on the next year's harvest. This attention to detail flows through all aspects of viticulture and vinification to produce exceptional wines that exude characteristics typical of the appellation.

Pinot Noir is a wonderfully versatile wine to match with food. It is fruity, smoky, savoury and smooth so can match to food almost to suit your mood. Think smoked salmon, cheeses, game and poultry, cured meats and lamb.

Savigny-les-Beaune is one of the most renowned villages in Cote du Beaune for Pinot Noir production. The chalky soils and perfect aspect of the 'Les Vergelesses' vineyard mean the grapes receive ideal conditions for ripening producing flawless wines with great elegance and finesse.

Pinot Noir from Savigny-les-Beaune has a wonderfully expressive style and is typical of the terroir of the area. It is velvety smooth and silky with heaps of red fruit character on both nose and palate. There is an elegance from the chalky soils and a slight warming spicy quality from the maturation in oak barrels.

Palish cherry red colour. Fine, expressive, slightly savoury nose with dried herbs, turned earth and red cherry fruit. The palate is supple with an elegantly savoury quality: notes of spice, herbs, earth and some tannic grip. But there’s also sweet red cherry fruit. A fine, elegant wine holding real tension between the sweet fruit and savouriness. But it’s not at all awkward, and retains its drinkability.
Really impressed by this, a stylish red Burgundy that marries sweet fruit beautifully with a refined savoury dimension. This is something Burgundy does really well: non-fruit complexity.
